Tonight's Dinner

Well yesterday I was ready with a recipe that I had just tried that night. But I didn't get around to it and I think you'll all be glad that I didn't, because tonight I tried a recipe that was yummy, very easy and family friendly. The other one was good, but more complicated, and not one I had any hope of convincing Ella to eat (hint, it was fish). This recipe had us all (minus Catherine, she's just a lost cause right now) asking for seconds!

Crispy Southwest Chicken Wraps
From My Kitchen Cafe
1 cup cooked rice, warm or at room temperature
1 cup cooked, shredded chicken
1 can black beans, rinsed and drained
1 green onion, finely sliced (white and green parts)
1/2 red or green pepper, diced
1/4 cup fresh cilantro, chopped
juice of 1 lime
1/2 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic salt
2 cups shredded cheese
Sour cream (optional)

6 burrito-sized flour tortillas (I had enough filling for at least 9)

Mix rice together with chili powder, cumin and garlic salt. Add remaining ingredients except for cheese and sour cream. Sprinkle cheese over tortillas, leaving 1/2-inch border around edges, then arrange chicken and rice mixture down the center of each tortilla.

Two options with the sour cream. You can add a few dollops to the cheese and chicken/rice mixture (original recipe) OR, you can do what we did, which was leave it out and use the sour cream as a garnish.

Roll stuffed tortillas, leaving edges open. Spray the tortillas all over with cooking spray.

Heat a large non-stick skillet (or griddle) over medium heat for 1 minute. Arrange 2 wraps, seam-side down, in pan and cook until golden brown and crisp, about 2-3 minutes per side. Transfer to a plate and repeat with remaining wraps. Serve.

We made the first round of them, ate, and then I cooked up the second round. We like them best when they are hot and crispy.

Another great thing is that you can easily adjust this according to your tastes. Like it spicier, add more chili powder or add some hot sauce. More veggies? Add some corn. Dislike sour cream? Just leave it out and maybe serve with some salsa. This is definitely easy, healthy and most importantly, tastes great! I hope you give it a try!
